Since 2014, Cacao Chemistry has been redefining the possibilities of chocolate.  Guided by food science research, we abide by the principle that flavors that pair well together share similarities on the chemical level.  Cacao Chemistry makes everything in small batches from our 500-square-foot "factory" on the SE side of town in Colorado Springs, Colorado.

our passion for quality

Cacao Chemistry uses fine French chocolate in everything we make and we source it from a company that is a member of the World Cocoa Foundation.  Our spices come from The Savory Spice Shop, located across the street from our Downtown Colorado Springs store.  We use locally-grown fruit as much as possible and European-style butter.  We believe that using high-quality ingredients and simple recipes that have been expertly crafted ensures we have the best chocolates.  What could be a better pairing?

a chef + an engineer

Sam, a well-traveled Midwesterner, grew up in a food-centered family and decided to pursue a degree in baking and pastry from Johnson and Wales University-Denver.  Meanwhile, Travis, who's from Alaska, received his degree in computer science from St. Cloud State in Minnesota.  Both are obsessed about chocolate. They met in Colorado and decided to start a business where they produce the chocolate they like to eat so they'd always have a ready supply.  The company is located in Colorado Springs because fresh mountain air always makes everything taste better.  We now have a team of four employees who are professional chocolatiers and chocolate eaters.
